Training courses for the professional cook

These courses prepare students to operate in a kitchen of a restaurant as a Level 1 Chef. With practice, students learn practical skills to directly execute all kitchen tasks. It is a challenging course; students learn the different methods of preparing and pairing dishes. Students develop competencies and culinary skills that can be only learnt through practical training. The course also requires the repetition of cooking exercises at home. The usage and applications of the same technique in different contexts (such as in restaurants, cafeterias, snack bars and even in the home kitchen of chefs) are demonstrated. There will be tests on the student’s management of work throughout the whole duration of the course; the organisation of the catering, rationalisation of methods and time management and on food presentation and serving.

A 3-month course is valued as foundation internal training. At this point, it is possible to conclude the internal training with the subsequent course or you can choose in addition, direct teaching in a restaurant kitchen. The training with external teaching in a restaurant kitchen lasts 4 weeks, which can be extended to 8 or 12 weeks if the restaurateur is available. The cost for the organisation, administrative and tutelage  in the restaurant is Euro 300 (Euro 500 for foreigners for the larger administrative expenses) . The restaurateur may instead decide to offer an internship (as a paid employee);  in this case, the student will not pay for lessons and receive a salary because the student will work and learn at the same time. The opportunity to be hired as an apprentice is fully dependent on the restaurateur and not on the school.

Professional courses to start cooking professionally and professional refresher courses
These professional courses teach catering for those starting the profession; They are also aimed at those already working in catering as a skill refresher. In these courses students work intensively with continuous exercises to quickly achieve the culinary skills for all types of catering. The aim is to work in a restaurant, or to open an agriturismo, B&B or other gastronomic activities. These professional courses prepare students for large catering jobs; for this reason they are not suited for people passionate about cooking who want to cook at home. In these courses students work on school and home exercises to learn the techniques.

1 lesson with taste validation paired with wine, 3 hours.

Our Professional courses are valuable as professional training for those who aspire to become chefs, or as refresher courses to deepen and broaden culinary skills. In these courses, students work intensively with continuous exercises to quickly gain the capability to prepare all types of food in the kitchen. The aim of the course is to prepare students to work in a restaurant or to open an agriturismo, B&B or other culinary activities. Our professional courses prepare students for large-scale catering; this course is therefore not intended for students wishing to cook better at home.
